Wild Stir Fry

Wild Stir Fry

My last trip to Whole Foods was a treat for the eyes. I bought a few new things and finally had the chance to experiment last night!

Wild Shroom, Purple Cabbage, Red Pepper, and Kale Stir Fry.......

*Ingredients:

1/2 small head purple cabbage sliced
4 cloves garlic minced
2 shallots or 1/2 onion chopped
1/2 red bell pepper sliced
1 head curly kale/ de-stemmed
1 box wild mushrooms cleaned
veggie stock ( low sodium )
toasted pine nuts
1 Tbsp raw coconut oil
salt
pepper
garlic powder

* organic when possible *

-Heat coconut oil on med in saute pan
-add minced garlic & chopped shallot/onion
- saute until fragrant
- add the mushrooms and saute until softened
- then add a few splashes of stock
- add the cabbage & pepper
- add stock when needed if it starts to look dry
- add the kale and saute until soft
- last add the spices to taste and serve with toasted pine nuts on top

I made plain quinoa to serve with this but you can always add spices to dress it up a little bit.

THE SALAD!!

Ingredients:

1 small kohlrabi thinly sliced
1 small tomato
carrots
spinach
1 avocado
chopped almonds
evoo
apple cider vinegar
pepper
salt
dried dill

I was inspired by the beautiful Kohlrabi that I found!

Slice and throw all ingredients into a bowl.

Dress with a splash of oil, vinegar, and your fav spices.
I love dill!!

I am obsessed with having a colorful plate......it makes it so much fun and pretty gorgeous.

The FEED sporks are from Pottery Barn and every purchase provides 3 meals to a child in school.
Awesome!

Enjoy!

L'Shana Tova

Another year has passed......and what a year it has been!

Last night was a sweet reminder of all the goodness that this life has to offer.

Challah with raisins, apples dipped in honey, noodle kugel, veggie soup,  and a color filled vivacious salad.
Thank you mom and dad!!

This next week will bring reflection.....and more than usual!

What intention do I want this new year to carry?

What will change?

How will I make this year fulfilling and beautiful?

What I do know is that I intend to put more thought into this next year. As I get older there are things that I would like to accomplish and the clock seems to be ticking faster these days. I feel I am in a good place right now but need to be careful not to become content. I want to keep moving and learning and growing. It is an exciting time right now and best of all it's another excuse for the family to rally!!

I am wishing you, even if you don't celebrate the Jewish New Year, a wonderful week of family, love, and reflection.

T - 14 days until the girls head off to San Fran!!

I can not wait.

This will be my first time there and I feel like I am heading to the promise land.
It's the mecca of all things vegan and yogi.

Any recommendations?

I know we will be checking out the market, visiting a vineyard or two, driving the PCH, and practicing yoga at a couple of the many outstanding studios there.

Food......... Lots of food!

Have a great week.

What a wonderful and relaxing holiday weekend it was!

We definitely got our healthy dose of vitamin D.....which is super important.

Surprisingly, even us Floridians are more than likely to be somewhat deficient in our Vit D supply.
An easy way is to supplement or get your unprotected dose of sunshine weekly.....even daily.
Of course you must weigh the pros and cons with unprotected sunshine.

All that I know is that I am feeling great.....toasty skin, energetic, and fulfilled with the weekend with family!

Life is Good.
