the best day.....

the best day.......today......the 27th of April......my fathers birthday!!

Birthdays are a funny thing. We have one day a year where we REALLY celebrate someones life.
I'd like to think that everyday is everyone's birthday.

There is no way that I could possibly make my father understand the gratitude and love that I have for him in one day. Everyday I want him to know what an amazing father and role model he is. How I grew into a loving and compassionate woman because of him. I am now in a sacred and amazing relationship because of the examples I had from my parents!

Happy Birthday.....everyday DAD!!

in the kitchen....

Super Foods Extravaganza!

I needed a serious pick me up yesterday before I went to go teach.
I had been watching a David Wolfe video earlier that day and was inspired to cram all of the super foods that I had into one small smoothie!



banana
clover sprouts
chia blend
maca
lacuma
cacao
splash pomegranate juice
spinach
romaine
H2O
lemon
apple
celery

I wasn't sure what it would taste like but it ended up being SUPER yummy!

When in doubt......throw it in a blender and see what happens!


This is my gorgeous juice that I have been inspired by this week!

Isn't nature beautiful!?

I always use celery as my base for any juice or smoothie. It is super alkaline and hydrating.
Alkaline = health!!

Earth Day 2012


YAY!!

One of my most favorite days of the year!

Everyday is Earth Day in my eyes.
I am in constant awe of this existence and how much power we have to either support or destroy it.

My hope for Earth Day & everyday is that we each take responsibility for our effect on this world.
Every shower, every bite, every bag, it all has to go somewhere.

Lets make it simple.

The less we use, the less we buy, the less we consume......

the healthier the planet will be.



I am not proposing to go off the grid and live off the land......I WISH!

I, for myself, just want to be conscious.

Fresh & Clean Chopped Salad

I finally found an hour to run to Whole Foods last night!
It was a mad dash to get all of the ingredients that I would play with while hubby was at band practice.
Being in the kitchen is without a doubt my therapy!
I love the solitude, being surrounded by my beloved appliances, and creating healthy meals.

What has happened to me!?

I love this transition into craving the kitchen......I guess the busier we become the more we are drawn to the things we love. Here is last nights feast:

Chopped Salad

2 c diced cucumber
1c diced radish
2 chopped avocados
2 Tbsp lemon juice
1 Tbsp apple cider vinegar
2 Tbsp evoo
salt & pepper to taste
fresh herbs optional

Organic whenever possible!

mix and let it sit in fridge for at least 10 minutes

Enjoy!










I topped mine with some "goat cheese"

1 c cashews soaked (8hrs)
1c macadamia nuts soaked (8 hrs)
1 Tbsp nutritional yeast
3 Tbsp lemon juice
1 tsp salt

Rinse nuts well and blend in high speed blender with all other ingredients.

This year for my Birthday my gracious and generous family chipped in to buy me my first Paddle Board!!

Right of Spring

I think we skipped Spring and went straight to Summer!
It's been a cool 90 degrees the past couple days down here in S Florida.
I am not complaining!! It's been beautiful from sunrise to sunset.

We are embarking on a very meaningful weekend for a lot of people. Whether it is Passover or Easter or just an excuse to get together with loved ones.....we all will celebrate and contemplate in some way.
I am a lover of tradition. The way we pass these actions from generation to generation each time adding our own little flavor in some way. I look forward to every year for the chance to be with family, old friends, and new ones as well.
The first night of Passover Seder we had two new guests.... they were in the bellies of their mothers last year!!
Tonight we celebrate again the freedom that we enjoy while never forgetting what others have experienced for our growth. I personally believe that this is not a religious thing, but, a human thing.
We have come a long way with a long way to go.

My hope is that ALL beings will have the freedom that I experience everyday.

Of course the food is the crowning event of any holiday!!!
I found this AMAZING recipe for
Raw Vegan Gefilte Fish.




It's one of those traditional foods that you grow to love.


RAW VEGAN GEFILTE FISH


makes 8 gefilte "wishes"


you will need:
2c dry raw almonds, soaked overnight in filtered water
2c carrots chopped coarsely
1c carrot, cut into fine rounds, for decoration
2 stalks celery, cut into chunks
1/4c sweet/vidalia onion, cut into chunks
2 cloves garlic
1/2c dulse flakes
1/4c kelp granules
1/4c fresh squeezed lemon juice
1/8c cold pressed evoo
pinch-1/2tsp cayenne pepper, to taste


1. add garlic, onion, carrots, & celery chunks into the food processor, and chop as finely as possible. Transfer into mixing bowl.
2. process soaked almonds adding lemon juice, evoo, adding filtered h2o little by little if needed, until almonds become dough
3. add almond "dough", kelp, dulse, & cayenne to the mixing bowl
4. mix with spoon, or clean hands for added love!
5. form into gefilte-shaped patties and line onto your dehydrator sheet or cookie sheet (for oven on lowest setting) decorate top with thin carrot slices just like out of the jar!
6. set dehydrator/oven to 105 degrees, dehydrate/bake for 5 hrs, or until solid enough to stay together, while still being soft on the inside. flip 1/2 way through if desired


Get ready to impress guests w/the best Gefilte "Fish" they have ever tasted! What a beautiful "WISH"!!!

Happy Monday!!

Easy Raw Walnut Pate

This is a super yummy recipe adapted from


1 cup walnuts- soaked 8 hrs
splash braggs amino acids
1 tbsp lemon juice
1 tbsp purple onion
1/4 tsp garlic powder
pinch salt
fresh dill or parsley.....or both!

process until smooth!

This pate can be added to ANYTHING, salad, sandwich, crackers, veggies.
