endless possibilities....












Whenever I find a few extra hours I end up in the kitchen!!
This is my "me" time where I play music, enjoy the breeze, and create yummy treats.


Guacamole

This is a very common and easy way to enjoy avocado. No magic here....just great fresh ingredients!

Ingredients:

2 avocados
1 large tomato
1 lime juiced
1 handful cilantro
1 green onion
1 tsp celtic salt
1 1/2 tsp cumin


mash with fork....leave some chunks if desired

My new favorite knife!!

We were lucky enough to receive an amazing set of knives as a wedding gift.
I love them!!

A few years ago I went to a raw foods class and learned about ceramic knives.
It became my go to veggie prep knife.

Last month I found this knife and don't know how I will EVER use anything else. It is amazing and cuts through tomatoes like they are butter! It's light and delicate but super sharp and never needs to be sharpened.

Perfection.



Definitely worth the investment.

Marinated Veggie Salad

Ingredients:

1 head kale (about 8 stems)
1 medium zucchini
3 carrots
1 bell pepper (red or orange)

You can always use other veggies that you have on hand.

Use a food processor to prep the kale, zucchini, and carrots.
Cut the pepper by hand.




Mix thoroughly and add dressing to coat veggies.

Serve immediately or let it marinate up to 24 hrs.
This will be good for 3-4 days in fridge.

You can use a simple evoo, lemon, salt dressing or any raw fresh dressing will do.
