Super Foods Mothers Day



Mothers Day Rawcos!



I was inspired by Jason Wrobel ...aka... J Wro... aka ...the most hilarious vegan chef in the biz!

He has his own plant based cooking show and seems to have my dream job....or at least one of them!!

To the tacos..............

Ingredients:

Rawco "meat"

1 1/2 cups walnuts, soaked 8-10 hrs
1/2 cup raw shelled hemp seeds
1/4 tsp chili powder
1/4 tsp salt or more to taste
1/4 tsp corriander
2 Tbsp coconut liquid aminos
1 Tbsp cold pressed olive oil

* or use a taco seasoning *

Place all ingredients into a blender or food processor and blend into desired consistency.


I washed and dried some organic romaine leaves, you can also use chard, and started to layer the goodness.

1st layer..........Raw living hummus
2nd layer.............. Rawco meat
3rd layer...........salsa


1/2 avo
1/2 red pepper
1 tomato
juice 1/2 lime
salt


I served it with the Raw Tahini Coleslaw.


Ingredients:

1 small head purple cabbage
5 medium carrots
1/4 onion
1 cucumber
large handful flat leaf parsley
1/2 cup hemp seeds

place all ingredients in food processor except hemp seeds.....add after

dressing:
2 Tbsp tahini, I made my own by blending 1 cup sesame seeds with 1.4 cups water
2 Tbsp grade b maple syrup
2 Tbsp apple cider vinegar
1 small lemon juiced
1/2 tsp garlic powder
salt & pepper to taste

Add the dressing before you serve and you can also add toppings like avo or citrus to break up the sweetness.


Everyone loved the raw vegan additions to our meal which was beautiful all around. It always makes me so happy to see someone....especially my grandparents...... munching on healthy food!!
